Heritage Cattle is pleased announce that Dr. Joe Paschal will be joining us on Friday, May 24,  with a practical presentation. After the Heritage Classic Appreciation Dinner at 6:00 p.m. at the Wharton County Fair Grounds, Dr. Paschal will use a live animal demonstration to draw the primals and cuts, and talk about the differences in each cut and which muscles are more tender. Not sure what the cuts of meat look like? There will be various cuts on hand for your inspection.
